Description
Burdock root, or gobo root, is a vegetable native to Northern Asia and Europe but has become common in North America, Australia, and other regions of the world. The burdock plant is a rather large biennial plant sometimes reaching 10 feet tall. The root is used in many Asian dishes either julienned or shredded. The vegetable is crisp with a sweet and mild taste.
